Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup of sliced mushrooms
  • 1 cup of cooked bacon, chopped
  • 1 cup of shredded Monterey Jack cheese
  • 1 cup of shredded cheddar cheese
  • 1/2 cup of honey mustard dressing
  • 1 tablespoon of olive oil
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • 1 teaspoon of paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness of about 1/2 inch.
  3. In a small bowl, mix garlic powder, onion powder, paprika, salt, and pepper. Rub this mixture all over the chicken breasts.
  4. Heat olive oil in a large skillet over medium-high heat. Sear the chicken breasts for 4-5 minutes on each side until golden brown.
  5. In a separate pan, cook the chopped bacon over medium heat until crispy. Drain on paper towels.
  6. In the same pan used for bacon, sauté the sliced mushrooms for 5-7 minutes until tender. Season lightly with salt and pepper.
  7. Transfer the seared chicken to a baking dish and drizzle honey mustard dressing over each piece.
  8. Sprinkle sautéed mushrooms and crispy bacon evenly over the chicken.
  9. Top each chicken breast with shredded Monterey Jack and cheddar cheese.
  10. Bake in the preheated oven for 25-30 minutes until the chicken is cooked through and the cheese is bubbly and golden.
  11. Use a meat thermometer to ensure the internal temperature reaches 165°F (75°C). If not, bake for a few more minutes.
  12. Let the chicken rest for 5 minutes, then garnish with freshly chopped parsley.
  13. Serve with steamed vegetables or a fresh salad.
  14. Dig in and savor the delightful mix of flavors!

Notes

  • Marinate for Extra Flavor: For enhanced flavor, marinate the chicken in honey mustard dressing for a few hours or overnight.
