  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1 cup chicken broth
  • 1 package (8 oz) of cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 cup uncooked white rice
  • 1/2 cup chopped green onions
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Season the chicken breasts with salt, pepper, garlic powder, onion powder, and paprika, rubbing the spices into the chicken.
  3. Heat olive oil in a large skillet over medium heat. Sear the seasoned chicken breasts for 5-7 minutes on each side until golden brown. Remove from skillet and set aside.
  4. In a large mixing bowl, combine cream of mushroom soup, cream of chicken soup, sour cream, and chicken broth. Stir until smooth.
  5. Add softened cream cheese (cut into smaller chunks) to the mixture and blend until creamy using a whisk or electric mixer.
  6. Fold in uncooked white rice, shredded cheddar cheese, and chopped green onions until evenly distributed.
  7. Lightly grease a 9×13 inch baking dish. Place the seared chicken breasts in the bottom of the dish.
  8. Pour the creamy rice mixture over the chicken, ensuring it covers evenly. Spread with a spatula if necessary.
  9. Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes.
  10. After 45 minutes, carefully remove the foil and return the casserole to the oven. Bake uncovered for an additional 15-20 minutes until bubbly and golden brown.
  11. Remove from the oven and let sit for 10 minutes before serving.
