- 2 ripe bananas, mashed
- 1/2 cup unsalted butter, melted
- 1 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup white chocolate chips
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, mash the ripe bananas with a fork until smooth, leaving a few small chunks for texture if desired.
- Add the melted butter to the mashed bananas, ensuring it’s not too hot.
- Stir in the brown sugar until well combined, creating a thick and glossy mixture.
- Crack the egg into the bowl and add the vanilla extract. Mix until fully incorporated.
- In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. A few lumps are fine!
- Fold in the white chocolate chips and chopped walnuts (if using).
- Prepare an 8×8-inch baking pan by greasing it or lining it with parchment paper.
- Pour the batter into the prepared baking pan, spreading it evenly.
- Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out with a few moist crumbs.
- Remove from the oven and let cool in the pan for about 10 minutes.
- Lift the blondies out of the pan using parchment paper (if used) and transfer to a wire rack to cool completely.
- Once cool, cut into squares (about 16) and dust with powdered sugar or drizzle with melted white chocolate if desired.
- Serve on a platter or in a dessert box. Enjoy with vanilla ice cream or whipped cream!
- Store leftovers in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week. They freeze well too!
Notes
- For added spice, mix in 1/2 teaspoon of cinnamon or nutmeg to the dry ingredients.
- For a nut-free version, omit the walnuts or substitute with sunflower seeds or pumpkin seeds.
