  • 1/2 cup unsalted butter, melted
  • 1 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup white chocolate chips
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, mash the ripe bananas with a fork until smooth, leaving a few small chunks for texture if desired.
  3. Add the melted butter to the mashed bananas, ensuring it’s not too hot.
  4. Stir in the brown sugar until well combined, creating a thick and glossy mixture.
  5. Crack the egg into the bowl and add the vanilla extract. Mix until fully incorporated.
  6. In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  7. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. A few lumps are fine!
  8. Fold in the white chocolate chips and chopped walnuts (if using).
  9. Prepare an 8×8-inch baking pan by greasing it or lining it with parchment paper.
  10. Pour the batter into the prepared baking pan, spreading it evenly.
  11. Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out with a few moist crumbs.
  12. Remove from the oven and let cool in the pan for about 10 minutes.
  13. Lift the blondies out of the pan using parchment paper (if used) and transfer to a wire rack to cool completely.
  14. Once cool, cut into squares (about 16) and dust with powdered sugar or drizzle with melted white chocolate if desired.
