  • 1 lb (450 g) beef sirloin or flank steak, thinly sliced
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes (optional)
  • Salt and pepper, to taste
  • 1 cup beef broth
  • 1 tablespoon soy sauce
  • 1 tablespoon Worcestershire sauce
  • 1 cup cherry tomatoes, halved
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add the pasta and cook according to package instructions until al dente (about 8-10 minutes).
  3. Before draining, reserve about 1 cup of the pasta cooking water.
  4. Drain the pasta and set aside without rinsing.
  5. Season the thinly sliced beef with salt and pepper.
  6. In a large skillet, melt 2 tablespoons of butter over medium-high heat.
  7. Add the beef in a single layer, searing for 2-3 minutes on each side until browned and cooked through. Remove and cover with foil.
  8. In the same skillet, melt the remaining 2 tablespoons of butter, then add minced garlic and red pepper flakes. Sauté for 1-2 minutes until fragrant.
  9. Pour in beef broth, soy sauce, and Worcestershire sauce. Stir and simmer for 3-4 minutes.
  10. Add halved cherry tomatoes and cook for an additional 2-3 minutes until softened.
  11. Add the cooked beef back into the skillet, stirring to combine.
  12. Toss in the drained pasta, ensuring it is well coated with the sauce.
  13. If needed, add reserved pasta water gradually until desired consistency is reached.
  14. Sprinkle grated Parmesan cheese over the pasta and toss until melted and evenly distributed.
  15. Taste and adjust seasoning with salt, pepper, or red pepper flakes if desired.
  16. Remove from heat and garnish with chopped parsley.
  17. Serve immediately, optionally adding extra Parmesan and crusty bread on the side.
