  • 8 oz. lo mein noodles
  • 1 lb. beef (flank steak or sirloin), thinly sliced against the grain
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • 1 cup broccoli florets
  • 1 cup bell peppers, sliced (red and green for color)
  • 1 cup snap peas
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 green onions, chopped
  • 1 tablespoon sesame oil
  • Salt and pepper to taste

Instructions

  1. Bring a large pot of water to a boil. Add the lo mein noodles and cook according to package instructions (about 4-5 minutes) until al dente. Drain and rinse under cold water to stop cooking. Set aside.
  2. In a medium bowl, combine the sliced beef with 2 tablespoons soy sauce, 1 tablespoon oyster sauce, and 1 tablespoon cornstarch. Mix well and let marinate for 15-20 minutes.
  3. While the beef marinates, wash and chop the broccoli, slice the bell peppers, and trim the snap peas. Mince the garlic and ginger, and chop the green onions, separating the white parts from the green.
  4. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated beef in a single layer and sear for 2 minutes without stirring. Stir and cook for an additional 2-3 minutes until cooked through. Remove from skillet and set aside.
  5. In the same skillet, add another tablespoon of vegetable oil. Add minced garlic and ginger, stirring for about 30 seconds until fragrant. Add broccoli, bell peppers, and snap peas, stir-frying for 3-4 minutes until tender-crisp. Season with salt and pepper.
  6. Return the beef to the skillet. Add the cooked lo mein noodles and toss everything together gently. Drizzle with 1 tablespoon of sesame oil and toss again. Adjust seasoning with more soy sauce or oyster sauce if desired.
  7. Sprinkle chopped green onions over the top and give everything one last toss. Taste and adjust seasoning as necessary.
  8. Serve hot, garnished with additional green onions if desired. Enjoy your homemade beef lo mein!
