- 1 cup orzo pasta
- 2 cups chicken broth
- 1 cup cooked chicken, shredded or diced
- 2 cups fresh broccoli florets
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1/4 teaspoon red pepper flakes (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- In a medium saucepan, bring 2 cups of chicken broth to a boil over medium-high heat.
- Once boiling, add 1 cup of orzo pasta and stir gently to prevent sticking.
- Reduce heat to medium-low and let simmer for 8-10 minutes, or until al dente, stirring occasionally.
- Remove from heat, keeping the broth with the orzo.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat.
- Add the diced onion and sauté for 3-4 minutes until translucent.
- Add minced garlic and sauté for an additional 1-2 minutes.
- Toss in the broccoli florets and cook for about 5 minutes until bright green and tender-crisp.
- If using leftover cooked chicken, add it now. If using raw chicken, add it and cook until no longer pink, about 5-7 minutes.
- Pour the cooked orzo (with broth) into the skillet with chicken and broccoli.
- Stir gently to combine.
- Add shredded cheddar and grated Parmesan cheese, stirring until melted and creamy.
- Season with dried thyme, salt, pepper, and red pepper flakes (if using). Stir well.
- Remove from heat once everything is heated through and creamy.
- Garnish with freshly chopped parsley before serving.
- Serve warm in bowls or on plates. Enjoy!
Notes
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or on the stovetop, adding a splash of chicken broth if needed.
