  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 cup cooked chicken, shredded or diced
  • 2 cups fresh broccoli florets
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1/4 teaspoon red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a medium saucepan, bring 2 cups of chicken broth to a boil over medium-high heat.
  2. Once boiling, add 1 cup of orzo pasta and stir gently to prevent sticking.
  3. Reduce heat to medium-low and let simmer for 8-10 minutes, or until al dente, stirring occasionally.
  4. Remove from heat, keeping the broth with the orzo.
  5. In a large skillet, heat 1 tablespoon of olive oil over medium heat.
  6. Add the diced onion and sauté for 3-4 minutes until translucent.
  7. Add minced garlic and sauté for an additional 1-2 minutes.
  8. Toss in the broccoli florets and cook for about 5 minutes until bright green and tender-crisp.
  9. If using leftover cooked chicken, add it now. If using raw chicken, add it and cook until no longer pink, about 5-7 minutes.
  10. Pour the cooked orzo (with broth) into the skillet with chicken and broccoli.
  11. Stir gently to combine.
  12. Add shredded cheddar and grated Parmesan cheese, stirring until melted and creamy.
  13. Season with dried thyme, salt, pepper, and red pepper flakes (if using). Stir well.
  14. Remove from heat once everything is heated through and creamy.
  15. Garnish with freshly chopped parsley before serving.
  16. Serve warm in bowls or on plates. Enjoy!

Notes

  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or on the stovetop, adding a splash of chicken broth if needed.
