  • 4 boneless, skinless chicken breasts
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 4 large flour tortillas
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup fresh spinach leaves
  • 1 cup diced tomatoes
  • 1/2 cup ranch dressing (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pound the chicken breasts to an even thickness on a cutting board.
  3. In a small bowl, mix minced garlic, garlic powder, onion powder, paprika, salt, and pepper.
  4. Rub the seasoning mix all over the chicken breasts.
  5. Heat 2 tablespoons of olive oil in a large oven-safe skillet over medium-high heat. Sear the chicken for 4-5 minutes on each side until golden brown.
  6. Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the internal temperature reaches 165°F (75°C).
  7. Remove the skillet from the oven and sprinkle the shredded mozzarella and cheddar cheese over the chicken. Return to the oven for an additional 5 minutes until the cheese is melted and bubbly.
  8. While the chicken is baking, warm the tortillas in a dry skillet over low heat for about 30 seconds on each side.
  9. Let the chicken rest for a few minutes after baking, then slice it into strips.
  10. Assemble the wraps by laying a warm tortilla flat, adding spinach leaves, cheesy chicken strips, ranch dressing (if using), and diced tomatoes.
  11. Fold the sides of the tortilla in towards the center, then roll it tightly from the bottom upwards.
  12. Place the wrap seam-side down on a plate. Optionally, slice it in half diagonally.
  13. For extra crunch, grill the wraps in a heated pan with a little olive oil for 2-3 minutes on each side until golden brown.
  14. Garnish with fresh parsley and serve with extra ranch dressing if desired.
