- 4 boneless, skinless chicken breasts
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 4 large flour tortillas
- 4 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup fresh spinach leaves
- 1 cup diced tomatoes
- 1/2 cup ranch dressing (optional)
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Pound the chicken breasts to an even thickness on a cutting board.
- In a small bowl, mix minced garlic, garlic powder, onion powder, paprika, salt, and pepper.
- Rub the seasoning mix all over the chicken breasts.
- Heat 2 tablespoons of olive oil in a large oven-safe skillet over medium-high heat. Sear the chicken for 4-5 minutes on each side until golden brown.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the internal temperature reaches 165°F (75°C).
- Remove the skillet from the oven and sprinkle the shredded mozzarella and cheddar cheese over the chicken. Return to the oven for an additional 5 minutes until the cheese is melted and bubbly.
- While the chicken is baking, warm the tortillas in a dry skillet over low heat for about 30 seconds on each side.
- Let the chicken rest for a few minutes after baking, then slice it into strips.
- Assemble the wraps by laying a warm tortilla flat, adding spinach leaves, cheesy chicken strips, ranch dressing (if using), and diced tomatoes.
- Fold the sides of the tortilla in towards the center, then roll it tightly from the bottom upwards.
- Place the wrap seam-side down on a plate. Optionally, slice it in half diagonally.
- For extra crunch, grill the wraps in a heated pan with a little olive oil for 2-3 minutes on each side until golden brown.
- Garnish with fresh parsley and serve with extra ranch dressing if desired.
