Enjoy these Cheesy Ranch Potatoes, featuring crispy roasted baby potatoes smothered in a creamy ranch sauce, topped with melted cheddar and fresh green onions. Perfect for any gathering or family dinner!

Ingredients

Scale
  • 2 pounds of baby potatoes, halved or quartered
  • 1 cup of shredded cheddar cheese
  • 1/2 cup of ranch dressing
  • 1/4 cup of sour cream
  • 1/4 cup of green onions, chopped
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • 1 teaspoon of paprika
  • Salt and pepper to taste
  • 2 tablespoons of olive oil
  • 1/2 cup of crispy bacon bits (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse the baby potatoes under cold water. Cut them in half or quarters for even cooking.
  3. In a large bowl, mix the halved potatoes with olive oil, garlic powder, onion powder, paprika, salt, and pepper. Toss until well coated.
  4. Spread the seasoned potatoes in a single layer on a parchment-lined baking sheet.
  5. Roast the potatoes for 25-30 minutes, stirring halfway through for even browning.
  6. Pierce the potatoes with a fork to check tenderness. If needed, roast for an additional 5-10 minutes.
  7. In a medium bowl, combine ranch dressing, sour cream, and half of the shredded cheddar cheese. Stir until blended.
  8. Fold in the chopped green onions and optional crispy bacon bits into the cheesy ranch mixture.
  9. Once the potatoes are roasted, let them cool slightly, then fold them into the cheesy ranch mixture.
  10. Pour the mixture into a greased 9×13-inch baking dish, spreading evenly.
  11. Sprinkle the remaining cheddar cheese over the top.
  12. Bake for an additional 15-20 minutes until the cheese is melted and bubbly. Broil for 2-3 minutes for a crispy top if desired.
  13. Let the dish sit for a few minutes before serving. Garnish with additional chopped green onions.
  14. Serve as a side dish or a hearty snack.

Notes

  • For a spicier kick, consider adding some diced jalapeños to the cheesy ranch mixture.
