- 1 cup of shredded mozzarella cheese
- 1 medium onion, finely chopped
- 2 cloves of garlic, minced
- 1 cup of frozen peas (or fresh if available)
- 1 cup of diced bell peppers (any color)
- 1 teaspoon of paprika
- 1 teaspoon of dried oregano
- Salt and pepper to taste
- 2 tablespoons of olive oil or butter
- Fresh parsley for garnish (optional)
Instructions
- Rinse the rice under cold water in a fine-mesh strainer until the water runs clear.
- In a large pot, heat olive oil or butter over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
- Add minced garlic and sauté for an additional minute, being careful not to burn it.
- Stir in the rinsed rice, coating it with the oil and mixing with the onions and garlic. Toast for a couple of minutes.
- Pour in the broth, add paprika, oregano, salt, and pepper. Stir to combine and ensure the rice is evenly distributed.
- Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is tender and liquid is absorbed.
- While the rice cooks, prepare the vegetables. Blanch fresh peas if using, or set frozen peas aside.
- Once the rice is cooked, remove from heat and let it sit covered for 5 minutes.
- Fluff the rice with a fork and gently fold in the peas and diced bell peppers.
- Sprinkle shredded cheddar and mozzarella over the rice and vegetables, stirring gently to combine and melt the cheese.
- Taste and adjust seasoning if necessary.
- For a crispy top, transfer to a greased baking dish, preheat oven to 375°F (190°C).
- Spread the mixture evenly in the dish and sprinkle extra cheese on top.
- Bake for 15-20 minutes until cheese is melted, bubbly, and slightly golden.
- Let cool for a few minutes before serving. Garnish with parsley if desired.
