  • 1 cup of shredded mozzarella cheese
  • 1 medium onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 cup of frozen peas (or fresh if available)
  • 1 cup of diced bell peppers (any color)
  • 1 teaspoon of paprika
  • 1 teaspoon of dried oregano
  • Salt and pepper to taste
  • 2 tablespoons of olive oil or butter
  • Fresh parsley for garnish (optional)

Instructions

  1. Rinse the rice under cold water in a fine-mesh strainer until the water runs clear.
  2. In a large pot, heat olive oil or butter over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
  3. Add minced garlic and sauté for an additional minute, being careful not to burn it.
  4. Stir in the rinsed rice, coating it with the oil and mixing with the onions and garlic. Toast for a couple of minutes.
  5. Pour in the broth, add paprika, oregano, salt, and pepper. Stir to combine and ensure the rice is evenly distributed.
  6. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is tender and liquid is absorbed.
  7. While the rice cooks, prepare the vegetables. Blanch fresh peas if using, or set frozen peas aside.
  8. Once the rice is cooked, remove from heat and let it sit covered for 5 minutes.
  9. Fluff the rice with a fork and gently fold in the peas and diced bell peppers.
  10. Sprinkle shredded cheddar and mozzarella over the rice and vegetables, stirring gently to combine and melt the cheese.
  11. Taste and adjust seasoning if necessary.
  12. For a crispy top, transfer to a greased baking dish, preheat oven to 375°F (190°C).
  13. Spread the mixture evenly in the dish and sprinkle extra cheese on top.
  14. Bake for 15-20 minutes until cheese is melted, bubbly, and slightly golden.
  15. Let cool for a few minutes before serving. Garnish with parsley if desired.
