  • 1/4 teaspoon salt
  • 1 cup (175 g) chocolate chips (optional)
  • 1/2 cup (50 g) chopped nuts (optional)

Instructions

  1. In a large mixing bowl, combine the canned pumpkin puree, brown sugar, and granulated sugar. Use a whisk or a hand mixer to blend them together until the mixture is smooth and creamy.
  2. Add the softened butter to the pumpkin mixture. Beat it in until fully incorporated.
  3. Crack in the egg and pour in the vanilla extract. Mix everything together until well combined.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, baking powder, ground cinnamon, ground nutmeg, ground ginger, and salt.
  5. Gradually add the dry mixture to the wet ingredients in three parts, mixing well after each addition.
  6. If using, fold in the chocolate chips or nuts.
  7. Cover the bowl with plastic wrap and refrigerate the dough for at least 30 minutes.
  8. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
