- 1 pound of large shrimp, peeled and deveined
- 1 pound of chicken breast, boneless and skinless, cut into bite-sized pieces
- 8 ounces of linguine or spaghetti
- 4 tablespoons of unsalted butter
- 4 tablespoons of olive oil
- 4 cloves of garlic, minced
- 1 teaspoon of red pepper flakes (adjust to taste)
- 1 cup of chicken broth
- 1 cup of dry white wine (like Sauvignon Blanc)
- Juice of 1 lemon
- 1/4 cup of fresh parsley, chopped
- Salt and pepper to taste
- Grated Parmesan cheese for serving (optional)
Instructions
- Bring a large pot of salted water to a boil (about 1 tablespoon of salt).
- Add the linguine or spaghetti and cook according to package instructions until al dente (8-10 minutes).
- Reserve about 1 cup of pasta water, then drain the rest and set the pasta aside. Toss with a little olive oil to prevent sticking.
- In a large skillet, heat 2 tablespoons of olive oil and 2 tablespoons of butter over medium-high heat.
- Add the chicken pieces, season with salt and pepper, and cook for 5-7 minutes until golden brown and cooked through. Remove and cover with foil to keep warm.
- In the same skillet, add the remaining olive oil and butter. Once melted, add minced garlic and red pepper flakes, sautéing for 1-2 minutes until fragrant.
- Add the shrimp, season with salt and pepper, and cook for 3-4 minutes until pink and opaque.
- Pour in the white wine and chicken broth, bringing to a simmer while scraping up browned bits from the skillet.
- Let the sauce simmer for about 5 minutes to reduce slightly. Taste and adjust seasoning or add lemon juice as needed.
- Stir in lemon juice and chopped parsley for freshness.
- Return the cooked chicken to the skillet along with the drained pasta. Toss gently to coat the pasta with the sauce. Add reserved pasta water if needed for consistency.
- Taste and adjust seasoning with more salt, pepper, or lemon juice if desired.
- Plate the Chicken Scampi in large bowls, garnishing with additional parsley and grated Parmesan cheese if desired.
- Serve immediately while hot, with crusty bread on the side to soak up the delicious sauce.
