  • 1 pound of large shrimp, peeled and deveined
  • 1 pound of chicken breast, boneless and skinless, cut into bite-sized pieces
  • 8 ounces of linguine or spaghetti
  • 4 tablespoons of unsalted butter
  • 4 tablespoons of olive oil
  • 4 cloves of garlic, minced
  • 1 teaspoon of red pepper flakes (adjust to taste)
  • 1 cup of chicken broth
  • 1 cup of dry white wine (like Sauvignon Blanc)
  • Juice of 1 lemon
  • 1/4 cup of fresh parsley, chopped
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving (optional)

Instructions

  1. Bring a large pot of salted water to a boil (about 1 tablespoon of salt).
  2. Add the linguine or spaghetti and cook according to package instructions until al dente (8-10 minutes).
  3. Reserve about 1 cup of pasta water, then drain the rest and set the pasta aside. Toss with a little olive oil to prevent sticking.
  4. In a large skillet, heat 2 tablespoons of olive oil and 2 tablespoons of butter over medium-high heat.
  5. Add the chicken pieces, season with salt and pepper, and cook for 5-7 minutes until golden brown and cooked through. Remove and cover with foil to keep warm.
  6. In the same skillet, add the remaining olive oil and butter. Once melted, add minced garlic and red pepper flakes, sautéing for 1-2 minutes until fragrant.
  7. Add the shrimp, season with salt and pepper, and cook for 3-4 minutes until pink and opaque.
  8. Pour in the white wine and chicken broth, bringing to a simmer while scraping up browned bits from the skillet.
  9. Let the sauce simmer for about 5 minutes to reduce slightly. Taste and adjust seasoning or add lemon juice as needed.
  10. Stir in lemon juice and chopped parsley for freshness.
  11. Return the cooked chicken to the skillet along with the drained pasta. Toss gently to coat the pasta with the sauce. Add reserved pasta water if needed for consistency.
  12. Taste and adjust seasoning with more salt, pepper, or lemon juice if desired.
  13. Plate the Chicken Scampi in large bowls, garnishing with additional parsley and grated Parmesan cheese if desired.
  14. Serve immediately while hot, with crusty bread on the side to soak up the delicious sauce.
