- 1 pound of spaghetti
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, chopped (any color you prefer)
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 can (14.5 ounces) diced tomatoes, undrained
- 1 can (10.5 ounces) cream of mushroom soup
- 1 cup chicken broth
- 1 teaspoon Italian seasoning
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- 1/4 cup fresh parsley, chopped (for garnish)
Instructions
- Bring a large pot of salted water to a boil (about 1 tablespoon of salt).
- Add the spaghetti and cook according to package instructions until al dente (8-10 minutes). Stir occasionally to prevent sticking. Drain and set aside, drizzling with a little olive oil if desired.
- In a large skillet or Dutch oven, heat olive oil over medium heat.
- Add chopped onion and bell pepper; sauté for 3-4 minutes until onion is translucent.
- Add minced garlic and sauté for an additional minute until fragrant.
- Add chicken pieces, season with salt, pepper, Italian seasoning, and paprika. Cook for 5-7 minutes until chicken is browned and cooked through.
- Pour in the diced tomatoes (with juices) and cream of mushroom soup. Stir to combine.
- Add chicken broth and bring to a gentle simmer. Cook for 5-10 minutes, stirring occasionally. Taste and adjust seasoning as needed.
- Add drained spaghetti to the skillet and toss gently until well coated.
- If the sauce is too thick, add more chicken broth to reach desired consistency.
- Stir in half of the shredded cheddar cheese.
- Preheat oven to 350°F (175°C).
- Transfer the mixture to a greased 9×13 inch baking dish and spread evenly.
- Top with remaining shredded cheddar cheese.
- Bake for 20-25 minutes until cheese is melted and bubbly. Let cool for a few minutes before serving.
- Sprinkle chopped fresh parsley over the top before serving.
- Serve hot, ideally with a side salad or garlic bread.
