  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, chopped (any color you prefer)
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 can (10.5 ounces) cream of mushroom soup
  • 1 cup chicken broth
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Bring a large pot of salted water to a boil (about 1 tablespoon of salt).
  2. Add the spaghetti and cook according to package instructions until al dente (8-10 minutes). Stir occasionally to prevent sticking. Drain and set aside, drizzling with a little olive oil if desired.
  3. In a large skillet or Dutch oven, heat olive oil over medium heat.
  4. Add chopped onion and bell pepper; sauté for 3-4 minutes until onion is translucent.
  5. Add minced garlic and sauté for an additional minute until fragrant.
  6. Add chicken pieces, season with salt, pepper, Italian seasoning, and paprika. Cook for 5-7 minutes until chicken is browned and cooked through.
  7. Pour in the diced tomatoes (with juices) and cream of mushroom soup. Stir to combine.
  8. Add chicken broth and bring to a gentle simmer. Cook for 5-10 minutes, stirring occasionally. Taste and adjust seasoning as needed.
  9. Add drained spaghetti to the skillet and toss gently until well coated.
  10. If the sauce is too thick, add more chicken broth to reach desired consistency.
  11. Stir in half of the shredded cheddar cheese.
  12. Preheat oven to 350°F (175°C).
  13. Transfer the mixture to a greased 9×13 inch baking dish and spread evenly.
  14. Top with remaining shredded cheddar cheese.
  15. Bake for 20-25 minutes until cheese is melted and bubbly. Let cool for a few minutes before serving.
  16. Sprinkle chopped fresh parsley over the top before serving.
  17. Serve hot, ideally with a side salad or garlic bread.
