  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 tablespoon olive oil
  • Zest of 1 orange
  • Zest of 1 lemon
  • Zest of 1 lime
  • Fresh cilantro or parsley for garnish

Instructions

  1. In a large mixing bowl, combine orange juice, lemon juice, lime juice, honey, minced garlic, grated ginger, salt, black pepper, paprika, and zests. Whisk until well combined. Place chicken in a resealable bag or shallow dish, pour marinade over, seal, and refrigerate for at least 1 hour (up to 4 hours for best flavor).
  2. Preheat grill to medium-high or oven to 375°F (190°C). If grilling, oil the grill grates with a paper towel dipped in olive oil. If baking, line a baking sheet with parchment paper.
  3. Remove chicken from marinade, letting excess drip off. Discard leftover marinade. Grill chicken for 6-7 minutes on one side, then flip and cook for another 6-7 minutes until internal temperature reaches 165°F (75°C). If baking, place chicken on prepared baking sheet and bake for 25-30 minutes until cooked through.
  4. Once cooked, remove chicken from heat and let it rest for 5 minutes to allow juices to redistribute.
  5. In a small saucepan, combine 1/2 cup reserved marinade (if set aside) with 1 tablespoon cornstarch mixed with 2 tablespoons water. Bring to a gentle boil over medium heat, stirring constantly until thickened (about 3-5 minutes). Remove from heat.
  6. Slice rested chicken or serve whole. Arrange on a platter, drizzle with citrus sauce, and garnish with chopped cilantro or parsley.
  7. Serve with jasmine rice, quinoa, a fresh green salad, or roasted vegetables. For a twist, try citrus-infused couscous or a refreshing citrus salad.
