- 1 cup creamy peanut butter
- 1 cup coconut milk
- 1/4 cup soy sauce
- 1/4 cup honey
- 2 tablespoons rice vinegar
- 2 tablespoons sesame oil
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 teaspoon red pepper flakes (adjust to taste)
- 1/2 cup chopped green onions (for garnish)
- 1/4 cup chopped peanuts (for garnish)
- Cooked rice or noodles (for serving)
Instructions
- Trim any excess fat from the chicken thighs and cut them into bite-sized pieces. Season with a pinch of salt and pepper.
- In a separate bowl, whisk together the peanut butter, coconut milk, soy sauce, honey, rice vinegar, sesame oil, garlic, ginger, and red pepper flakes until smooth.
- Place the chicken pieces in the slow cooker and pour the peanut sauce over them, stirring gently to coat.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours. Stir the chicken halfway through cooking.
- Check for doneness; the chicken should be tender and easily shredded. If desired, shred the chicken in the slow cooker.
- If the sauce is too thick, add a splash of water or coconut milk to reach the desired consistency.
- Serve over cooked rice or noodles, drizzling with extra sauce. Garnish with chopped green onions and peanuts.
