  • 2 tablespoons rice vinegar

  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 1/2 cup chopped green onions (for garnish)
  • 1/4 cup chopped peanuts (for garnish)
  • Cooked rice or noodles (for serving)

Instructions

  1. Trim any excess fat from the chicken thighs and cut them into bite-sized pieces. Season with a pinch of salt and pepper.
  2. In a separate bowl, whisk together the peanut butter, coconut milk, soy sauce, honey, rice vinegar, sesame oil, garlic, ginger, and red pepper flakes until smooth.
  3. Place the chicken pieces in the slow cooker and pour the peanut sauce over them, stirring gently to coat.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours. Stir the chicken halfway through cooking.
  5. Check for doneness; the chicken should be tender and easily shredded. If desired, shred the chicken in the slow cooker.
  6. If the sauce is too thick, add a splash of water or coconut milk to reach the desired consistency.
  7. Serve over cooked rice or noodles, drizzling with extra sauce. Garnish with chopped green onions and peanuts.
