- 1 pound fresh green beans, trimmed
- 1 pound baby potatoes, halved
- 4 slices of bacon, chopped
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 tablespoon apple cider vinegar (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Wash the green beans under cold water, trim the ends, and set aside.
- Rinse the baby potatoes and halve them for even cooking.
- Chop the bacon into small pieces.
- Dice the onion and mince the garlic.
- Gather thyme, oregano, salt, and pepper.
- Heat olive oil in a large skillet over medium heat. Add chopped bacon and cook until crispy (5-7 minutes). Remove bacon with a slotted spoon and drain on paper towels, leaving drippings in the skillet.
- In the same skillet, sauté diced onion for 3-4 minutes until translucent.
- Add minced garlic and sauté for an additional 1-2 minutes.
- Stir in halved baby potatoes and cook for about 5 minutes, stirring occasionally.
- Add trimmed green beans to the skillet and stir to combine.
- Pour in chicken broth, add thyme, oregano, salt, and pepper. Stir well.
- Bring to a gentle boil, then reduce heat to low. Cover and simmer for 20-25 minutes until potatoes are tender.
- Check potatoes for doneness; if needed, cover and cook for an additional 5 minutes.
- Stir in crispy bacon and drizzle with apple cider vinegar if desired. Adjust seasoning to taste.
- Remove from heat and transfer to a serving dish.
- Garnish with chopped parsley and serve warm.
