  • 1 pound baby potatoes, halved
  • 4 slices of bacon, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Wash the green beans under cold water, trim the ends, and set aside.
  2. Rinse the baby potatoes and halve them for even cooking.
  3. Chop the bacon into small pieces.
  4. Dice the onion and mince the garlic.
  5. Gather thyme, oregano, salt, and pepper.
  6. Heat olive oil in a large skillet over medium heat. Add chopped bacon and cook until crispy (5-7 minutes). Remove bacon with a slotted spoon and drain on paper towels, leaving drippings in the skillet.
  7. In the same skillet, sauté diced onion for 3-4 minutes until translucent.
  8. Add minced garlic and sauté for an additional 1-2 minutes.
  9. Stir in halved baby potatoes and cook for about 5 minutes, stirring occasionally.
  10. Add trimmed green beans to the skillet and stir to combine.
  11. Pour in chicken broth, add thyme, oregano, salt, and pepper. Stir well.
  12. Bring to a gentle boil, then reduce heat to low. Cover and simmer for 20-25 minutes until potatoes are tender.
  13. Check potatoes for doneness; if needed, cover and cook for an additional 5 minutes.
  14. Stir in crispy bacon and drizzle with apple cider vinegar if desired. Adjust seasoning to taste.
  15. Remove from heat and transfer to a serving dish.
  16. Garnish with chopped parsley and serve warm.
