  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • Salt and pepper, to taste
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1 cup cherry tomatoes, halved
  • 1/2 cup fresh parsley, chopped
  • 1/2 cup grated Parmesan cheese
  • Juice of 1 lemon

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add the linguine pasta and cook according to package instructions until al dente (8-10 minutes). Stir occasionally.
  3. Reserve about 1 cup of pasta water, then drain the rest and set the pasta aside in a large bowl.
  4. In a large skillet, heat olive oil over medium-high heat. Add chicken pieces.
  5. Season with salt, pepper, smoked paprika, garlic powder, onion powder, oregano, thyme, and cayenne pepper. Stir to coat.
  6. Cook for 5-7 minutes until golden brown and cooked through. Remove chicken and set aside.
  7. In the same skillet, reduce heat to medium and add butter. Let it melt and bubble.
  8. Add minced garlic and sauté for 1-2 minutes until fragrant.
  9. Pour in chicken broth and simmer for 3-4 minutes.
  10. Stir in heavy cream and simmer for another 2-3 minutes until slightly thickened.
  11. Add halved cherry tomatoes and cook for an additional 2 minutes.
  12. Return cooked chicken to the skillet and stir to combine with the sauce and tomatoes.
  13. Add cooked linguine and toss gently to coat. If too thick, add reserved pasta water, a tablespoon at a time.
  14. Stir in chopped parsley and grated Parmesan cheese until well combined.
  15. Squeeze lemon juice over the pasta and toss again.
  16. Serve immediately, garnished with extra parsley and Parmesan cheese if desired. Pair with a side salad or crusty bread.
