- 1 pound linguine pasta
- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- Salt and pepper, to taste
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/2 teaspoon cayenne pepper (adjust to taste)
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1 cup cherry tomatoes, halved
- 1/2 cup fresh parsley, chopped
- 1/2 cup grated Parmesan cheese
- Juice of 1 lemon
Instructions
- Bring a large pot of salted water to a boil.
- Add the linguine pasta and cook according to package instructions until al dente (8-10 minutes). Stir occasionally.
- Reserve about 1 cup of pasta water, then drain the rest and set the pasta aside in a large bowl.
- In a large skillet, heat olive oil over medium-high heat. Add chicken pieces.
- Season with salt, pepper, smoked paprika, garlic powder, onion powder, oregano, thyme, and cayenne pepper. Stir to coat.
- Cook for 5-7 minutes until golden brown and cooked through. Remove chicken and set aside.
- In the same skillet, reduce heat to medium and add butter. Let it melt and bubble.
- Add minced garlic and sauté for 1-2 minutes until fragrant.
- Pour in chicken broth and simmer for 3-4 minutes.
- Stir in heavy cream and simmer for another 2-3 minutes until slightly thickened.
- Add halved cherry tomatoes and cook for an additional 2 minutes.
- Return cooked chicken to the skillet and stir to combine with the sauce and tomatoes.
- Add cooked linguine and toss gently to coat. If too thick, add reserved pasta water, a tablespoon at a time.
- Stir in chopped parsley and grated Parmesan cheese until well combined.
- Squeeze lemon juice over the pasta and toss again.
- Serve immediately, garnished with extra parsley and Parmesan cheese if desired. Pair with a side salad or crusty bread.
