Description
This Cowboy Casserole is a delicious and filling dish featuring seasoned ground beef, black beans, corn, and tomatoes, all topped with a flaky crescent roll crust and melted cheddar cheese. It’s an easy, crowd-pleasing meal perfect for family dinners or potlucks.

- 1 pound ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) corn, drained
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (10 oz) diced tomatoes with green chilies
- 1 packet taco seasoning
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 1 can (8 oz) refrigerated crescent roll dough
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish, optional)
Instructions
- In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula (about 5-7 minutes).
- Drain any excess fat from the skillet.
- Add the diced onion and minced garlic to the skillet. Sauté for about 3-4 minutes, until the onion is translucent and fragrant.
- Stir in the corn, black beans, and diced tomatoes with green chilies. Mix well.
- Sprinkle the taco seasoning over the mixture and stir to combine. Adjust seasoning with salt and pepper as needed.
- Let the mixture simmer for about 5 minutes, then remove from heat and let cool slightly.
- Preheat your oven to 375°F (190°C).
- Lightly grease a 9×13 inch baking dish with cooking spray or olive oil.
- In a medium bowl, combine the sour cream and half of the shredded cheddar cheese. Mix until well combined.
- Spread the beef and bean mixture evenly across the bottom of the prepared baking dish.
- Dollop the cheesy sour cream mixture over the beef mixture and spread it out gently.
- Unroll the crescent roll dough and separate it into triangles. Lay the triangles over the top of the casserole, overlapping slightly.
- Sprinkle the remaining shredded cheddar cheese over the crescent roll dough.
- Place the casserole in the preheated oven and bake for about 25-30 minutes, or until the crescent roll dough is golden brown.
- If the top browns too quickly, cover it loosely with aluminum foil.
- Once done, remove from the oven and let cool for 5-10 minutes before serving.
- Cut the casserole into squares or rectangles and serve warm.
- Garnish with fresh chopped cilantro if desired.
