Description

This Cowboy Casserole is a delicious and filling dish featuring seasoned ground beef, black beans, corn, and tomatoes, all topped with a flaky crescent roll crust and melted cheddar cheese. It’s an easy, crowd-pleasing meal perfect for family dinners or potlucks.

  • 1 pound ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 can (8 oz) refrigerated crescent roll dough
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish, optional)

Instructions

  1. In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula (about 5-7 minutes).
  2. Drain any excess fat from the skillet.
  3. Add the diced onion and minced garlic to the skillet. Sauté for about 3-4 minutes, until the onion is translucent and fragrant.
  4. Stir in the corn, black beans, and diced tomatoes with green chilies. Mix well.
  5. Sprinkle the taco seasoning over the mixture and stir to combine. Adjust seasoning with salt and pepper as needed.
  6. Let the mixture simmer for about 5 minutes, then remove from heat and let cool slightly.
  7. Preheat your oven to 375°F (190°C).
  8. Lightly grease a 9×13 inch baking dish with cooking spray or olive oil.
  9. In a medium bowl, combine the sour cream and half of the shredded cheddar cheese. Mix until well combined.
  10. Spread the beef and bean mixture evenly across the bottom of the prepared baking dish.
  11. Dollop the cheesy sour cream mixture over the beef mixture and spread it out gently.
  12. Unroll the crescent roll dough and separate it into triangles. Lay the triangles over the top of the casserole, overlapping slightly.
  13. Sprinkle the remaining shredded cheddar cheese over the crescent roll dough.
  14. Place the casserole in the preheated oven and bake for about 25-30 minutes, or until the crescent roll dough is golden brown.
  15. If the top browns too quickly, cover it loosely with aluminum foil.
  16. Once done, remove from the oven and let cool for 5-10 minutes before serving.
  17. Cut the casserole into squares or rectangles and serve warm.
  18. Garnish with fresh chopped cilantro if desired.
