  • 1 pound chorizo sausage
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 cup cream cheese, softened
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Chips or veggies for serving

Instructions

  1. In a large skillet over medium heat, add the ground beef and chorizo sausage. Use a wooden spoon to break up the meat as it cooks.
  2. Cook the meat for about 5-7 minutes, or until it’s browned and cooked through. Stir occasionally to ensure even cooking.
  3. Drain any excess fat from the skillet.
  4. Add the diced onion to the skillet and sauté for about 3-4 minutes, or until the onion becomes translucent.
  5. Add the minced garlic and cook for an additional minute, stirring frequently.
  6. In the same skillet, add the can of diced tomatoes with green chilies. Stir to combine with the meat mixture.
  7. Add the drained black beans and corn. Mix everything together until well combined.
  8. Sprinkle in the chili powder, cumin, salt, and pepper. Stir well to ensure the spices are evenly distributed.
  9. Reduce the heat to low and add the softened cream cheese. Stir until fully melted and incorporated.
  10. Once the cream cheese is melted, gradually add the shredded cheddar and Monterey Jack cheeses, stirring well after each addition.
  11. Continue to stir over low heat until all the cheese is melted and the dip is smooth and creamy (about 3-5 minutes).
  12. Taste the dip and adjust the seasoning if necessary.
  13. Transfer the dip to a serving bowl or keep it in the skillet. If using a slow cooker, transfer the dip to that and keep it warm on low.
  14. Garnish with freshly chopped cilantro.
  15. Serve warm with tortilla chips, fresh veggies, or crusty bread for dipping.
