Description

These Crack Breakfast Sliders (Bacon Egg & Cheese) are the ultimate morning crowd-pleaser! Layered with soft Hawaiian rolls, fluffy scrambled eggs, crispy bacon, and melty cheddar, then brushed with a savory buttery glaze and baked to perfection. Perfect for brunch parties, busy weekends, or breakfast meal prep—these sliders are fast, flavorful, and totally addictive.

Ingredients

Scale
  • 12 Hawaiian sweet rolls (connected)

  • 8 large eggs

  • ½ cup milk

  • Salt and pepper, to taste

  • 68 slices bacon, cooked and crumbled

  • 1½ cups shredded cheddar cheese (or cheese slices)

  • 2 tbsp unsalted butter, melted

  • 1 tbsp Dijon mustard

  • 1 tsp Worcestershire sauce

  • ½ tsp garlic powder

  • 1 tsp poppy seeds (optional)

Instructions

  • Scramble the Eggs:
Whisk together eggs, milk, salt, and pepper. Scramble gently in a nonstick skillet over medium heat until just set. Set aside.

  • Prep the Rolls:
Slice the Hawaiian rolls in half horizontally, keeping the tops and bottoms intact as single slabs. Place the bottoms in a greased 9×13-inch baking dish.

  • Assemble:
Layer scrambled eggs evenly over the rolls. Sprinkle with bacon and shredded cheese. Place the top half of rolls over the filling.

  • Make the Glaze:
In a small bowl, mix melted butter, Dijon mustard, Worcestershire, garlic powder, and poppy seeds. Brush generously over the tops of the rolls.

  • Bake:
Cover loosely with foil and bake at 350°F (175°C) for 15 minutes. Remove foil and bake an additional 5–7 minutes until the tops are golden brown and the cheese is melted.

  • Serve:
Slice into individual sliders and serve warm!

Notes

  • Swap bacon with cooked sausage links or crumbled sausage for variety.

  • Don’t overcook the eggs—they’ll finish setting in the oven.

  • Make-ahead tip: Assemble the night before, refrigerate, then bake fresh in the morning.

  • Freezer-friendly: Wrap baked sliders individually and freeze for up to 2 months.

  • Great for brunch, school mornings, or breakfast-for-dinner!
