Instructions

  1. In a large pot, over medium heat, add a drizzle of olive oil. Once hot, add the Italian sausage. Break it apart with a wooden spoon and cook until browned, about 5-7 minutes. Remove the sausage and set aside, leaving the drippings in the pot.
  2. In the same pot, add the chopped onions, garlic, carrots, and celery. Sauté for about 5 minutes until the vegetables are tender and fragrant.
  3. Pour in the chicken broth and add the Italian seasoning, salt, and pepper. Bring it to a gentle simmer.
  4. Add the cooked sausage back into the pot. If you’re using pasta, toss it in now and let everything simmer together for about 10 minutes or until the pasta is cooked through.
  5. Reduce the heat to low and slowly stir in the heavy cream. Allow the soup to heat through without boiling. Taste and adjust seasonings as necessary.
