Instructions
- Preheat your oven to 400°F (200°C).
- Wash the red bell peppers under cold water and pat them dry.
- Cut the peppers in half lengthwise, removing seeds and stems.
- Place the halved peppers cut side down on a baking sheet, drizzle with olive oil, and rub to coat.
- Roast in the oven for 25-30 minutes until skins are blistered and charred.
- Remove from the oven, let cool, and peel off the charred skin.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
- Chop the roasted red peppers into smaller pieces and add them to the skillet. Cook for another 2-3 minutes.

- While the sauce simmers, bring a large pot of salted water to a boil. Cook your pasta according to package instructions until al dente.
- Reserve about 1 cup of pasta water, then drain the pasta in a colander without rinsing.
- If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
- Add the drained pasta to the skillet with the creamy red pepper Alfredo sauce. Toss gently to coat.
- Adjust seasoning if necessary, adding more salt or pepper to taste.
- Remove from heat and garnish with fresh chopped basil if desired.
