  • 1 tablespoon fresh basil, chopped (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the red bell peppers under cold water and pat them dry.
  3. Cut the peppers in half lengthwise, removing seeds and stems.
  4. Place the halved peppers cut side down on a baking sheet, drizzle with olive oil, and rub to coat.
  5. Roast in the oven for 25-30 minutes until skins are blistered and charred.
  6. Remove from the oven, let cool, and peel off the charred skin.
  7. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  8. Chop the roasted red peppers into smaller pieces and add them to the skillet. Cook for another 2-3 minutes.
  9. Pour in the heavy cream, stirring continuously, and bring to a gentle simmer.
  10. Gradually add the grated Parmesan cheese, stirring until melted and smooth.
  11. Sprinkle in the Italian seasoning, and season with salt and pepper to taste.
  12. Allow the sauce to simmer for an additional 5-7 minutes, stirring occasionally.
  13. While the sauce simmers, bring a large pot of salted water to a boil. Cook your pasta according to package instructions until al dente.
  14. Reserve about 1 cup of pasta water, then drain the pasta in a colander without rinsing.
  15. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
  16. Add the drained pasta to the skillet with the creamy red pepper Alfredo sauce. Toss gently to coat.
  17. Adjust seasoning if necessary, adding more salt or pepper to taste.
  18. Remove from heat and garnish with fresh chopped basil if desired.
