Instructions
- Fill a large pot with water, add a generous pinch of salt, and bring to a rolling boil over high heat.
- Add the fettuccine pasta to the boiling water and cook according to package instructions (about 8-10 minutes) until al dente. Stir occasionally to prevent sticking.
- Reserve about 1 cup of pasta water, then drain the pasta in a colander. Drizzle with a little olive oil to prevent sticking.
- Season the sirloin steak strips generously with salt and pepper.
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat until hot but not smoking.
- Add the seasoned steak strips in a single layer and cook for 2-3 minutes on each side until browned and cooked to your desired doneness. Remove from skillet and set aside.
- In the same skillet, reduce heat to medium and add minced garlic. Sauté for about 30 seconds until fragrant.
- Pour in 1 cup of beef broth, scraping the bottom of the skillet to deglaze. Let it simmer for 2-3 minutes to reduce slightly.
- Slowly add 1 cup of heavy cream, stirring continuously to create a rich sauce.
- Stir in 1 teaspoon of Italian seasoning and adjust seasoning with salt and pepper. Simmer for another 3-5 minutes until slightly thickened.
- Gradually stir in 1 cup of grated Parmesan cheese until melted and smooth.
- Add the cooked steak back into the skillet, stirring to coat evenly with the sauce.
- Add the drained fettuccine to the skillet and toss gently to coat. If the sauce is too thick, add reserved pasta water to reach desired consistency.
- Taste and adjust seasoning if necessary.
- Use tongs to twirl the creamy steak pasta onto plates or serve family-style in a large bowl.
- Sprinkle with freshly chopped parsley and additional Parmesan cheese if desired.
- Serve immediately while hot and creamy, paired with a side salad or crusty bread.
