  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Fill a large pot with water, add a generous pinch of salt, and bring to a rolling boil over high heat.
  2. Add the fettuccine pasta to the boiling water and cook according to package instructions (about 8-10 minutes) until al dente. Stir occasionally to prevent sticking.
  3. Reserve about 1 cup of pasta water, then drain the pasta in a colander. Drizzle with a little olive oil to prevent sticking.
  4. Season the sirloin steak strips generously with salt and pepper.
  5. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat until hot but not smoking.
  6. Add the seasoned steak strips in a single layer and cook for 2-3 minutes on each side until browned and cooked to your desired doneness. Remove from skillet and set aside.
  7. In the same skillet, reduce heat to medium and add minced garlic. Sauté for about 30 seconds until fragrant.
  8. Pour in 1 cup of beef broth, scraping the bottom of the skillet to deglaze. Let it simmer for 2-3 minutes to reduce slightly.
  9. Slowly add 1 cup of heavy cream, stirring continuously to create a rich sauce.
  10. Stir in 1 teaspoon of Italian seasoning and adjust seasoning with salt and pepper. Simmer for another 3-5 minutes until slightly thickened.
  11. Gradually stir in 1 cup of grated Parmesan cheese until melted and smooth.
  12. Add the cooked steak back into the skillet, stirring to coat evenly with the sauce.
  13. Add the drained fettuccine to the skillet and toss gently to coat. If the sauce is too thick, add reserved pasta water to reach desired consistency.
  14. Taste and adjust seasoning if necessary.
