  • 2 cups cooked chicken, shredded
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1/2 cup cream cheese, softened
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • Salt and pepper, to taste
  • 1012 corn or flour tortillas
  • Vegetable oil, for frying

Instructions

  1. In a large mixing bowl, combine the shredded chicken, cream cheese, shredded cheese, garlic powder, onion powder, cumin, salt, and pepper. Mix until the ingredients are well incorporated.
  2. To prevent the tortillas from cracking, warm them slightly in a dry skillet over medium heat for about 30 seconds on each side or wrap them in a damp paper towel and microwave them for 20-30 seconds.
  3. Take a warm tortilla and place about 2-3 tablespoons of the chicken filling in the center. Roll it tightly, tucking in the sides as you go.
  4. In a frying pan, add enough vegetable oil to cover the bottom by about 1/4 inch. Heat the oil over medium-high heat until it reaches 350°F (175°C).
  5. Carefully place the filled taquitos seam-side down into the hot oil. Fry for about 2-3 minutes on each side, or until golden brown and crispy.
  6. Once cooked, remove the taquitos from the oil and place them on a paper towel-lined plate to drain any excess oil. Serve hot with your favorite dipping sauces.
