Ingredients
Scale
- 2 cups all-purpose flour
- 1 cup apple cider
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- Optional: 1/2 cup chopped walnuts or pecans
Instructions
- Step 1: Preheat your oven to 350°F (175°C).
- Step 2: Line your baking sheet with parchment paper.
- Step 3: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar using an electric mixer until light and fluffy, about 2-3 minutes.
- Step 4: Beat in the egg and vanilla extract until well combined.
- Step 5: In another bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
- Step 6: Pour in the apple cider and mix gently until the dough is cohesive. If adding nuts, fold them in at this point.
- Step 7: Using a cookie scoop or a tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Step 8: Bake the cookies for 10-12 minutes, or until the edges are golden brown while the centers remain soft.
- Step 9: Let the cookies cool on the baking sheet for 5 minutes before transferring them to a cooling rack to cool completely.
