Description

These delightful Banana Bread Cinnamon Rolls combine the comforting flavors of banana bread with the soft, pillowy goodness of cinnamon rolls. Perfect for breakfast or a sweet snack, they are sure to impress anyone who tries them!

Ingredients

Scale
  • 23 medium ripe bananas
  • All-purpose flour (or whole wheat flour)
  • Granulated sugar (or brown sugar, coconut sugar, or sugar substitute)
  • Unsalted butter (or coconut oil or vegan butter substitute)
  • 1 large egg (or flax egg)
  • Active dry yeast (or instant yeast)
  • Ground cinnamon (and a pinch of nutmeg, optional)
  • Whole milk (or almond milk or oat milk)
  • Brown sugar (for the filling)
  • Powdered sugar (for the glaze)
  • Vanilla extract (for the glaze)

Instructions

  1. In a large mixing bowl, mash the ripe bananas until smooth. Stir in melted butter, sugar, and the egg.
  2. In another bowl, combine flour, yeast, and salt. Gradually mix the dry ingredients into the wet ingredients until a dough forms.
  3. Turn the dough onto a floured surface and knead for about 5-7 minutes until it’s smooth and elastic. If the dough is too sticky, sprinkle a little more flour as needed.
  4. Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until it doubles in size.
  5. While the dough is rising, mix together brown sugar, cinnamon, and melted butter in a small bowl. Set aside.
  6. Once the dough has risen, punch it down and roll it out on a floured surface into a rectangle about ½ inch thick.
  7. Spread the cinnamon filling mixture evenly over the rolled-out dough, leaving a small border around the edges.
  8. Starting from one long edge, carefully roll the dough into a log. Slice it into 12 equal rolls with a sharp knife or dental floss for clean cuts.
  9. Place the cinnamon rolls in a greased baking dish, cover them with a cloth, and let them rise for another 30 minutes.
  10. Preheat your oven to 350°F (175°C). Bake the rolls for 25-30 minutes, or until they are golden brown and cooked through.
  11. While the rolls are baking, whip up a simple glaze by mixing powdered sugar with a splash of milk and vanilla extract until smooth.
  12. Once the rolls are out of the oven, let them cool slightly, then drizzle the glaze over the top.

Keywords: The riper the bananas, the sweeter and more flavorful your rolls will be. Consider adding chopped nuts, chocolate chips, or dried fruit to the filling for an extra twist.
