Instructions
- In a large mixing bowl, mash the ripe bananas until smooth. Stir in melted butter, sugar, and the egg.
- In another bowl, combine flour, yeast, and salt. Gradually mix the dry ingredients into the wet ingredients until a dough forms.
- Turn the dough onto a floured surface and knead for about 5-7 minutes until it’s smooth and elastic. If the dough is too sticky, sprinkle a little more flour as needed.
- Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until it doubles in size.
- While the dough is rising, mix together brown sugar, cinnamon, and melted butter in a small bowl. Set aside.
- Once the dough has risen, punch it down and roll it out on a floured surface into a rectangle about ½ inch thick.
- Spread the cinnamon filling mixture evenly over the rolled-out dough, leaving a small border around the edges.
- Starting from one long edge, carefully roll the dough into a log. Slice it into 12 equal rolls with a sharp knife or dental floss for clean cuts.
- Place the cinnamon rolls in a greased baking dish, cover them with a cloth, and let them rise for another 30 minutes.
- Preheat your oven to 350°F (175°C). Bake the rolls for 25-30 minutes, or until they are golden brown and cooked through.
- While the rolls are baking, whip up a simple glaze by mixing powdered sugar with a splash of milk and vanilla extract until smooth.
- Once the rolls are out of the oven, let them cool slightly, then drizzle the glaze over the top.
