Instructions

  1. Preheat your oven to 350°F (175°C). Line a cupcake tin with paper liners.
  2. In a mixing bowl, mash 2-3 ripe bananas until smooth. Set aside.
  3. In another bowl, cream together 1/2 cup of softened unsalted butter and 1 cup of brown sugar until light and fluffy. Add in 2 eggs (or flax eggs) and 1 teaspoon of vanilla extract, mixing well.
  4. Fold the mashed bananas into the wet mixture until just combined.
