- 2–3 ripe bananas
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar

Instructions
- Preheat your oven to 350°F (175°C). Line a cupcake tin with paper liners.
- In a mixing bowl, mash 2-3 ripe bananas until smooth. Set aside.
- In another bowl, cream together 1/2 cup of softened unsalted butter and 1 cup of brown sugar until light and fluffy. Add in 2 eggs (or flax eggs) and 1 teaspoon of vanilla extract, mixing well.
- Fold the mashed bananas into the wet mixture until just combined.
- In a separate bowl, whisk together 1 ½ cups of all-purpose flour, 1 teaspoon of baking powder, 1/2 teaspoon of baking soda, and 1 teaspoon of cinnamon.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix!
- If using, fold in 1/2 cup of chopped walnuts or pecans gently into the batter.

- While the cupcakes are cooling, melt 1/4 cup of butter in a small saucepan and stir in 1/2 cup of brown sugar, allowing it to bubble gently. Add in 1/4 cup of heavy cream or coconut cream and a splash of vanilla. Stir until smooth.
