- In a mixing bowl, combine 1 ½ cups of crushed graham crackers, ½ cup of melted butter, and ¼ cup of sugar. Mix until well combined, then press this mixture firmly into the bottom of a greased 9×9-inch baking pan.
- Bake the crust in the preheated oven for about 10 minutes or until golden. Remove it and let it cool while preparing the filling.
- In a large bowl, beat together 16 ounces of softened cream cheese, ¾ cup of granulated sugar, and 2 teaspoons of vanilla extract until smooth and creamy. Add in 2 large eggs, one at a time, mixing until fully incorporated.
- Fold in 2 cups of peeled and diced apples along with 1 teaspoon of cinnamon and ¼ teaspoon of nutmeg.
- Spread the cheesecake filling evenly over the cooled crust in the baking pan.
- Bake the entire pan in the oven for about 25-30 minutes, or until the edges are set, and the center has a slight jiggle.
- Once baked, let the cheesecake bars cool at room temperature for an hour, then refrigerate for at least 4 hours or overnight for best results.
- Before serving, drizzle your favorite caramel sauce over the top. You can also sprinkle extra diced apples and some chopped nuts for added texture.
