Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking pan and line it with parchment paper, leaving an overhang on the sides.
  2. If using store-bought pie crusts, gently unroll them and slightly overlap two crusts, pressing the seam together or rolling them out to fit the pan. Press the dough into the bottom and up the sides of the prepared pan, trimming any excess dough if needed.
  3. In a large bowl, combine peeled, cored, and 1/4-inch sliced apples with granulated sugar, flour, lemon juice, cinnamon, and nutmeg. Toss gently until the apples are evenly coated.
  4. Pour the apple mixture evenly over the pie crust in the baking pan. Drizzle about half of your caramel sauce generously over the apples.
  5. In a separate medium bowl, combine all-purpose flour, brown sugar, a pinch of cinnamon, and old-fashioned rolled oats (if using). Add cold, cubed unsalted butter and cut it into the dry ingredients until the mixture resembles coarse crumbs.
  6. Evenly sprinkle the crumble topping over the apples and caramel in the baking pan.
  7. Bake for 45-60 minutes, or until the crumble topping is golden brown and the apple filling is bubbling around the edges. Cover the edges with aluminum foil if they brown too quickly.
  8. Remove the slab pie bars from the oven and let them cool completely on a wire rack for 2-3 hours before cutting.
  9. Once cooled, lift the slab pie out of the pan using the parchment paper overhangs. Drizzle the remaining caramel sauce over the top, slice into individual bars, and serve.
