Instructions
- Preheat your oven to 400°F (200°C) and grease a 9×13-inch baking pan, dusting it lightly with cornmeal.
- In a large mixing bowl, whisk together the cornmeal, all-purpose flour, granulated sugar, baking powder, baking soda, and salt until well combined.
- In a separate medium bowl, whisk together the buttermilk, milk, eggs, and melted butter until smooth.
- Pour the wet ingredients into the dry ingredients and mix gently until just combined, being careful not to overmix.
- Fold in about 3/4 of the shredded cheddar cheese and any optional add-ins.
- Pour the batter into the prepared baking pan and sprinkle the remaining cheddar cheese on top.

- Allow to cool in the pan for 10-15 minutes before slicing into squares.
