Ingredients
Scale
- 3–4 medium ripe bananas
- Espresso powder (or instant coffee granules as a substitute)
- Unsweetened cocoa powder
- All-purpose flour (or whole wheat flour as a substitute)
- Unsalted butter (or coconut oil/non-dairy butter substitute)
- Granulated sugar (or brown sugar/coconut sugar as alternatives)
- 2 large eggs (or 1/4 cup unsweetened applesauce/flaxseed meal mixture as a vegan option)
- Baking soda
- Salt
- 1 cup semi-sweet or dark chocolate chips (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan or line it with parchment paper.
- In a large mixing bowl, mash the ripe bananas until smooth, leaving a few lumps if desired.
- Add the melted butter to the mashed bananas and stir until combined. Then add the eggs, granulated sugar, and espresso powder, stirring until well mixed.
- In another bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined, being careful not to overmix.
- Fold in the chocolate chips if using.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula. Bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean.
- Once baked, remove the bread from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Keywords: Use overripe bananas for optimal sweetness. You can add nuts, dried fruit, or coconut flakes for extra texture. Serve warm with butter or nut butter, and consider drizzling melted chocolate on top for a special touch.
