Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper for easy removal.
  2. In a large mixing bowl, whisk together 2 cups of all-purpose flour, 2 cups of granulated sugar, 1 teaspoon of baking soda, 1 teaspoon of baking powder, 1 teaspoon of salt, and 1 teaspoon of cinnamon. Add a pinch of nutmeg for additional flavor.
  3. In another bowl, beat together 4 large eggs, 1 cup of vegetable oil, and 1 teaspoon of vanilla extract until well combined.
  4. Stir in 2 cups of grated carrots and 1 cup of crushed pineapple (drained) to the wet mixture. If you're using nuts or coconut, fold them in now!
  5. Gradually add the dry ingredients to the wet mixture, gently folding until just combined. Be careful not to overmix – a few lumps are okay!
  6. Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  7. Once baked, let the cakes cool in the pans for about 10 minutes before transferring them to a wire rack to cool completely.
  8. While the cakes cool, prepare your favorite cream cheese frosting by beating together 8 oz of cream cheese, 1/2 cup of unsalted butter, 4 cups of powdered sugar, and 1 teaspoon of vanilla extract until smooth and creamy.
  9. Once the cakes are completely cool, spread a layer of frosting on top of one cake layer, place the other layer on top, and frost the top and sides of the cake. Don’t forget to sprinkle some extra chopped nuts or coconut on top for decoration!
