- 2 teaspoons active dry yeast

- 1/4 cup vegetable oil
- 1 teaspoon apple cider vinegar
Instructions
- In a small bowl, combine 1 cup of warm dairy-free milk (110°F) with 2 tablespoons of maple syrup. Sprinkle 2 teaspoons of active dry yeast on top and let it sit for about 5-10 minutes until it becomes frothy.
- In a large mixing bowl, whisk together 2 cups of gluten-free all-purpose flour, 1/4 cup of flaxseed meal, 1 teaspoon of salt, and 1 teaspoon of baking powder.
- Once the yeast is frothy, mix in 1/4 cup of vegetable oil and 1 teaspoon of apple cider vinegar into the yeast mixture.
- Pour the wet ingredients into the dry ingredients and stir until just combined. The dough will be sticky; don’t worry, that’s how it should be!
- Cover the bowl with a clean kitchen towel and let the dough rise in a warm place for about 1 hour, or until it has doubled in size.
- Once risen, lightly dust your hands with gluten-free flour and divide the dough into 12 equal portions. Shape each portion into a ball and place them on a parchment-lined baking sheet, leaving some space between each roll.
- Cover the shaped rolls with the kitchen towel and let them rise for another 30 minutes.
- While the rolls are rising, preheat your oven to 375°F (190°C).
- Once the second rise is complete, bake for 20-25 minutes, or until the tops are golden brown and the rolls sound hollow when tapped on the bottom.
- Let the rolls cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
