  • 1 teaspoon baking powder
  • 1/4 cup vegetable oil
  • 1 teaspoon apple cider vinegar

Instructions

  1. In a small bowl, combine 1 cup of warm dairy-free milk (110°F) with 2 tablespoons of maple syrup. Sprinkle 2 teaspoons of active dry yeast on top and let it sit for about 5-10 minutes until it becomes frothy.
  2. In a large mixing bowl, whisk together 2 cups of gluten-free all-purpose flour, 1/4 cup of flaxseed meal, 1 teaspoon of salt, and 1 teaspoon of baking powder.
  3. Once the yeast is frothy, mix in 1/4 cup of vegetable oil and 1 teaspoon of apple cider vinegar into the yeast mixture.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. The dough will be sticky; don’t worry, that’s how it should be!
  5. Cover the bowl with a clean kitchen towel and let the dough rise in a warm place for about 1 hour, or until it has doubled in size.
  6. Once risen, lightly dust your hands with gluten-free flour and divide the dough into 12 equal portions. Shape each portion into a ball and place them on a parchment-lined baking sheet, leaving some space between each roll.
  7. Cover the shaped rolls with the kitchen towel and let them rise for another 30 minutes.
  8. While the rolls are rising, preheat your oven to 375°F (190°C).
  9. Once the second rise is complete, bake for 20-25 minutes, or until the tops are golden brown and the rolls sound hollow when tapped on the bottom.
