Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan or line it with parchment paper.
- Peel, core, and chop the apples into small pieces. Set them aside.
- In a large bowl, whisk together the flour, baking soda, cinnamon, and salt.
- In another bowl, beat together the granulated sugar, brown sugar, and vegetable oil until well combined. Add in the eggs and vanilla extract, mixing until smooth.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the prepared apples gently until evenly distributed throughout the batter.
- Pour the batter into the prepared baking pan. Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
- While the cake is cooling, prepare the cream cheese frosting. In a medium bowl, beat together the softened cream cheese and unsalted butter until smooth. Gradually add the powdered sugar, mixing until creamy. Stir in the vanilla extract.
