Ingredients
Scale
- 1 pound ground beef
- 1 cup fresh breadcrumbs
- 1/4 cup finely chopped parsley
- 1/4 cup chopped mint
- 2 minced garlic cloves
- 1 teaspoon onion powder
- 1 teaspoon cumin
- Salt to taste
- Pepper to taste
- 1 cup yogurt
- 1/2 cup grated cucumber
- 1 tablespoon olive oil
- 1 tablespoon chopped dill or mint (optional)
- Fresh vegetables (cucumbers, tomatoes, red onions, bell peppers, spinach)
- Fluffy rice or quinoa (for serving)
- Feta cheese (for topping)
Instructions
- In a large bowl, combine ground beef, fresh breadcrumbs, finely chopped parsley, chopped mint, minced garlic cloves, onion powder, cumin, salt, and pepper. Mix until just combined, avoiding overmixing.
- Using your hands, shape the mixture into small meatballs, about 1-inch in diameter. Place them on a baking sheet lined with parchment paper.
- Preheat your oven to 400°F (200°C). Bake the meatballs for 20-25 minutes, or until they’re golden brown and cooked through. Alternatively, you can pan-fry them in a skillet over medium heat for about 10 minutes, turning frequently.
- While the meatballs are cooking, mix together yogurt, grated cucumber (squeezed to remove excess water), minced garlic clove, olive oil, and a pinch of salt. Stir in chopped dill or mint if desired.
- Start with a base of cooked rice or quinoa. Top with the meatballs, a generous dollop of tzatziki, and your choice of fresh veggies like diced tomatoes, sliced cucumbers, and red onions. Crumble feta cheese on top for added richness.
