Description

This Ground Beef Burrito Bowl combines all your favorite flavors in one satisfying dish. It’s customizable and perfect for meal prep or a quick weeknight dinner.

Ingredients

Scale
  • 1 lb lean ground beef
  • 1 cup white or brown rice
  • 1 can black beans (or pinto/kidney beans)
  • 1 bell pepper, diced
  • 1 onion, diced
  • 1 cup corn
  • 1 cup salsa (fresh or jarred)
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1 avocado, diced or 1/2 cup guacamole
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • Salt to taste

Instructions

  1. Cook the rice according to package instructions. If using brown rice, remember it may take longer to cook.
  2. In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it up with a spatula as it cooks, about 5-7 minutes.
  3. Once the beef is cooked, add diced onions and bell peppers to the skillet. Sauté for about 3-4 minutes until they soften.
  4. Sprinkle in cumin, chili powder, garlic powder, and salt. Stir well and let it cook for another 2 minutes to meld the flavors.
  5. Drain and rinse your beans, then add them to the skillet. Stir to combine and heat through, about 2-3 minutes.
  6. In individual serving bowls, layer cooked rice, the beef and bean mixture, and your choice of toppings like salsa, cheese, avocado, and any additional veggies.
  7. Serve immediately while warm, and enjoy your homemade Ground Beef Burrito Bowl!
