- Zucchini (chopped)
Instructions
- In a mixing bowl, combine 1/4 cup of honey, 1/4 cup of low-sodium soy sauce, 2 cloves of minced garlic, and a pinch of black pepper.
- Add the cubed chicken breast to the bowl, ensuring each piece is well-coated.
- Cover and let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for enhanced flavor.
- While the chicken is marinating, chop your vegetables into bite-sized pieces.
- Preheat your grill or grill pan over medium-high heat.
- Thread the marinated chicken, pineapple chunks, and vegetables onto skewers, alternating between each component.
- Make sure not to pack them too tightly for even cooking.
- Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally.
- The chicken should reach an internal temperature of 165°F (75°C) and have a nice char on the outside.
- Once cooked, remove the skewers from the grill and let them rest for a couple of minutes.
