Ingredients

Scale
  • 1/4 cup honey
  • 1/4 cup low-sodium soy sauce
  • 2 cloves minced garlic
  • Pinch of black pepper
  • Boneless, skinless chicken breasts (cubed)
  • Fresh pineapple chunks
  • Bell peppers (chopped)
  • Red onions (chopped)
  • Zucchini (chopped)

Instructions

  1. In a mixing bowl, combine 1/4 cup of honey, 1/4 cup of low-sodium soy sauce, 2 cloves of minced garlic, and a pinch of black pepper.
  2. Add the cubed chicken breast to the bowl, ensuring each piece is well-coated.
  3. Cover and let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for enhanced flavor.
  4. While the chicken is marinating, chop your vegetables into bite-sized pieces.
  5. Preheat your grill or grill pan over medium-high heat.
  6. Thread the marinated chicken, pineapple chunks, and vegetables onto skewers, alternating between each component.
  7. Make sure not to pack them too tightly for even cooking.
  8. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally.
  9. The chicken should reach an internal temperature of 165°F (75°C) and have a nice char on the outside.
  10. Once cooked, remove the skewers from the grill and let them rest for a couple of minutes.
  11. Serve with extra honey garlic sauce on the side for dipping.
