Ingredients
Scale
- 1 cup unsalted butter, softened
- 1/4 cup powdered sugar (plus extra for dusting)
- 1/4 cup cornstarch
- 1 1/2 cups all-purpose flour
- Zest of 1 lemon
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon vanilla extract
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
- In a mixing bowl, cream together the softened butter and 1/4 cup of powdered sugar using an electric mixer on medium speed until the mixture is light and fluffy, about 2-3 minutes.
- Add the cornstarch, all-purpose flour, lemon zest, lemon juice, vanilla extract, and a pinch of salt to the butter mixture. Mix on low speed until a soft dough forms, usually around 1-2 minutes.
- Using your hands, roll the dough into small balls, about 1 inch in diameter. Place them 2 inches apart on the prepared baking sheet to allow for spreading.
- Gently flatten each ball with the back of a fork or your fingers to about 1/2 inch thick.
- Bake in the preheated oven for 10-12 minutes, or until the edges are just starting to turn golden brown.
- Once baked, let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
- After the cookies have completely cooled, dust them generously with additional powdered sugar for a sweet finish.

Keywords: Ensure the butter is softened to room temperature for easy creaming. Use fresh lemon juice and zest for the best flavor. If you want a dairy-free option, you can substitute coconut oil or a plant-based butter alternative.
