  • Author: cooktrove
  • Total Time: 15 minutes
  • Yield: 8 servings 1x

Description

This Limoncello Berry Trifle is a refreshing dessert that combines zesty limoncello with sweet, juicy berries. It’s a simple yet impressive treat perfect for any summer gathering.

Ingredients

Scale
  • 1 cup mascarpone cheese
  • 1 cup whipping cream
  • 1/2 cup powdered sugar
  • 1/2 cup lemon juice
  • 1/2 cup lemon soda (or lemon syrup)
  • Ladyfingers (or pound cake or vanilla sponge cake)
  • Mixed berries (fresh strawberries, blueberries, raspberries, and blackberries)

Instructions

  1. In a large mixing bowl, combine 1 cup of mascarpone cheese with 1 cup of whipping cream and 1/2 cup of powdered sugar. Use an electric mixer to beat until soft peaks form. This will take about 3-4 minutes. Be careful not to overwhip!
  2. In a separate bowl, mix 1/2 cup of lemon juice with 1/2 cup of lemon soda (or lemon syrup). This will be your zesty soaking mixture for the ladyfingers.
  3. Quickly dip each ladyfinger into the lemon mixture, making sure they soak up the flavor without becoming too soggy. Lay them at the bottom of your trifle dish to form the first layer.
  4. Spread a layer of mixed berries over the soaked ladyfingers. You can use a combination of sliced strawberries, blueberries, and raspberries for a colorful presentation.
  5. Spoon half of the mascarpone cream mixture over the berries, smoothing it out gently with a spatula.
  6. Add another layer of soaked ladyfingers, followed by more mixed berries, and then top with the remaining mascarpone cream. Feel free to get creative with the layering order as well!
  7. Cover the trifle with plastic wrap and place it in the refrigerator for at least 4 hours, or overnight if you have the time. This allows all the flavors to meld beautifully.
  8. Before serving, you can garnish the top with additional berries and a sprinkle of powdered sugar for a lovely finishing touch. Use a large spoon to serve and enjoy the delightful layers!

Keywords: This trifle tastes even better when made a day in advance, as the flavors have time to develop. Feel free to add a hint of vanilla extract to the cream mixture for a lovely flavor boost or even a splash of orange juice for a citrus twist.
