Ingredients
- Boneless, skinless chicken breasts
- Freshly grated Parmesan cheese
- Cream cheese
- Garlic powder
- Dried Italian herbs
- Chopped chives
- Bread crumbs
- Olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Slice the chicken breasts in half horizontally to create pockets, being careful not to cut all the way through.
- In a mixing bowl, combine the cream cheese, grated Parmesan, garlic powder, dried herbs, and chopped chives. Mix until smooth and well-combined.
- Take a generous spoonful of the cheese mixture and stuff it into each chicken pocket. Press gently to seal the chicken around the filling.
- In another bowl, add the breadcrumbs. Dip each stuffed chicken breast into the breadcrumbs, making sure they are well-coated on both sides.
- Place the coated chicken bombs onto a lined baking sheet. Drizzle a little olive oil on top for extra crispiness.
- Bake in the preheated oven for about 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- Once cooked, let them rest for a few minutes before serving.

Keywords: You can prepare the chicken bombs in advance and refrigerate until ready to bake. Feel free to experiment with fillings like spinach or sun-dried tomatoes, and don't skip letting the chicken rest after baking to prevent the filling from spilling out.
