Instructions

  1. Preheat your oven to 350°F (175°C).
  2. If using fresh sweet potatoes, peel and chop them into chunks. Boil them in a pot of water for about 15-20 minutes or until they are tender. Drain and let them cool slightly.
  3. In a large mixing bowl, mash the cooked sweet potatoes until smooth.
  4. To the mashed sweet potatoes, add 1/2 cup of melted butter, 1 cup of brown sugar, 2 beaten eggs, 1 teaspoon of vanilla extract, and a pinch of salt. Mix until all ingredients are well combined.
  5. Pour the sweet potato mixture into a greased 9×13-inch baking dish, spreading it evenly.
  6. In a separate bowl, mix together 1/2 cup of brown sugar, 1/3 cup of flour, and 1/3 cup of softened butter until crumbly. You can also add chopped pecans for a delightful crunch.
  7. Sprinkle the topping over the sweet potato mixture. If using marshmallows, add them on top of the crumb mixture.
  8. Place the casserole in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and the marshmallows are melted and slightly toasted.
