Ingredients

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium saucepan over low heat, melt the unsalted butter. Once melted, remove it from heat and let it cool slightly.
  3. In a large bowl, combine the melted butter, granulated sugar, and brown sugar. Whisk until well blended.
  4. Beat in the eggs one at a time, mixing well after each addition. Stir in the peppermint extract.
  5. In a separate bowl, whisk together the cocoa powder, flour, and salt. Gradually add this mixture to the wet ingredients, stirring until just combined.
  6. Gently fold in the semi-sweet chocolate chips and half of the crushed candy canes into the batter.
  7. Using a cookie scoop or a tablespoon, place rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes or until the edges look set but the centers are still soft. They will continue to cook slightly on the baking sheet after removal.
  9. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  10. Once cooled, sprinkle the remaining crushed candy canes on top for an extra festive touch!
