Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium saucepan over low heat, melt the unsalted butter. Once melted, remove it from heat and let it cool slightly.
- In a large bowl, combine the melted butter, granulated sugar, and brown sugar. Whisk until well blended.
- Beat in the eggs one at a time, mixing well after each addition. Stir in the peppermint extract.
- In a separate bowl, whisk together the cocoa powder, flour, and salt. Gradually add this mixture to the wet ingredients, stirring until just combined.
- Gently fold in the semi-sweet chocolate chips and half of the crushed candy canes into the batter.
- Using a cookie scoop or a tablespoon, place rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges look set but the centers are still soft. They will continue to cook slightly on the baking sheet after removal.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
- Once cooled, sprinkle the remaining crushed candy canes on top for an extra festive touch!
