Ingredients
Scale
- 2 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 2 teaspoons vanilla extract
- ½ cup strawberry jam
- 1 cup powdered sugar
- 2 tablespoons milk
- Sprinkles (optional)
Instructions
- Step 1: Preheat the oven to 350°F (175°C).
- Step 2: In a mixing bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.
- Step 3: In a large bowl, cream together the softened butter and granulated sugar using an electric mixer until light and fluffy, about 3-4 minutes.
- Step 4: Add the egg and vanilla extract to the butter mixture, mixing until fully incorporated.
- Step 5: Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.
- Step 6: On a lightly floured surface, roll out the dough to about 1/4-inch thickness. Use a cookie cutter to cut out shapes. Place half of the cutouts on a parchment-lined baking sheet and spoon a small dollop of strawberry jam in the center of each cutout.
- Step 7: Place the remaining cutouts on top of the jam-filled cookies, pressing the edges gently to seal them.
- Step 8: Bake the cookies in the preheated oven for about 10-12 minutes or until the edges are lightly golden.
- Step 9: Allow the cookies to cool on a wire rack. While they cool, prepare the icing by whisking together the powdered sugar and milk until smooth. Drizzle the icing over the cooled cookies and add sprinkles if desired.
