  • 1 cup all-purpose flour

  • Fresh basil leaves for garnish

Instructions

  1. In a large pot, heat 2 tablespoons of olive oil over medium heat. Add one diced onion and sauté until translucent, about 5 minutes.
  2. Add 3 minced garlic cloves and cook for another minute, stirring frequently to avoid burning.
  3. Stir in 2 pounds of chopped fresh tomatoes or 2 cans of diced tomatoes, along with 4 cups of vegetable broth.
  4. Season with salt, pepper, and a teaspoon each of dried oregano and basil. Bring to a boil, then reduce heat and let it simmer for about 20 minutes.
  5. After simmering, use an immersion blender to blend the soup until smooth. If you prefer a chunkier texture, blend only half.
  6. Taste and adjust seasoning as needed. Keep the soup warm over low heat while you prepare the dumplings.
  7. In a bowl, combine 1 cup of ricotta cheese, ½ cup of grated Parmesan cheese, 1 large egg, and a pinch of salt and pepper.
  8. Gradually mix in 1 cup of all-purpose flour until a dough forms. If the mixture is too sticky, add a little more flour until it’s manageable.
  9. Bring a pot of salted water to a gentle simmer. Use a spoon to drop small amounts of the dumpling mixture into the water. Cook for about 3-4 minutes or until they float to the top.
