Instructions
- Start by washing the fresh spinach thoroughly, then blanch it in boiling water for about 2 minutes until wilted. Drain and immerse it in cold water to halt the cooking process. Squeeze out any excess water and chop it finely.
- In a dry skillet over medium heat, toast the walnuts for about 5-7 minutes until they are fragrant and lightly browned. Be sure to stir them frequently to prevent burning. Once cooled, chop them coarsely.
- In a large mixing bowl, combine the chopped spinach, toasted walnuts, bread cubes, and cheese. In a separate bowl, whisk together the eggs and seasonings. Pour the egg mixture over the bread and spinach mixture, and gently mix until everything is well combined.
- With your hands, take a portion of the mixture and shape it into a ball, about the size of a golf ball. Repeat until all the mixture is used up.
- Bring a large pot of salted water to a gentle simmer. Carefully add the dumplings and let them cook for about 15-20 minutes. They are done when they float to the surface.
- Use a slotted spoon to remove the dumplings from the water. Serve them warm with a drizzle of melted butter, a sprinkle of parmesan cheese, and perhaps a few fresh herbs for garnish.
