  • Author: cooktrove
  • Total Time: 45 minutes
  • Yield: 4 servings

Description

Dill Pickle Parmesan Chicken is a delightful twist on traditional chicken recipes, combining the tangy brightness of dill pickles with the rich, savory flavor of Parmesan cheese. This easy weeknight dinner option is sure to impress your family and friends!

Ingredients

  • Boneless, skinless chicken breasts
  • Whole dill pickles or dill pickle spears
  • Freshly grated Parmesan cheese
  • Panko breadcrumbs or regular breadcrumbs
  • Garlic powder
  • Onion powder
  • Dill weed
  • Cayenne pepper (optional)
  • Eggs
  • Flour
  • Pickle juice
  • Salt
  • Pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pound the chicken breasts to an even thickness.
  3. In a bowl, combine finely chopped dill pickles, a tablespoon of pickle juice, and half of the grated Parmesan cheese.
  4. Lay the chicken breasts flat and add a generous amount of the dill pickle mixture to one side. Fold the other side over to create a pocket and secure with toothpicks if necessary.
  5. Set up a breading station with three shallow dishes: flour in the first, whisked eggs in the second, and a mixture of breadcrumbs, remaining Parmesan cheese, garlic powder, onion powder, dill weed, salt, and pepper in the third.
  6. Dredge each stuffed chicken breast in the flour, shaking off excess, then dip it into the egg wash, and finally coat it in the breadcrumb mixture, pressing gently to ensure the breadcrumbs adhere well.
  7. Place the coated chicken breasts on a greased baking sheet or a lined baking dish, spaced out for even cooking.
  8. Bake in the preheated oven for about 25-30 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C). Broil for the last 2-3 minutes for a crispier finish.
  9. Allow the chicken to rest for a few minutes before slicing, then serve with a side salad or your favorite veggies.
