  • 1 cup peeled and chopped apples
  • ½ cup applesauce (optional, if using apples)
  • ½ cup peanut butter
  • 1 egg (or egg substitute: 1 tablespoon flaxseed meal + 2.5 tablespoons water)
  • 2 cups whole wheat flour (or substitute with oat flour or almond flour)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine 1 cup of finely grated carrots and 1 cup of peeled and chopped apples. If you’re using applesauce, add about ½ cup instead.
  3. Stir in ½ cup of peanut butter and 1 egg (or your egg substitute). Mix well until everything is combined.
  4. Gradually add 2 cups of whole wheat flour (or your chosen substitute) to the mixture. Stir until a dough forms. If the dough is too sticky, you can add a little more flour until it reaches a workable consistency.
  5. Turn the dough onto a lightly floured surface and knead for a couple of minutes until smooth.
  6. Roll out the dough to about ½ inch thick. Use a knife or cookie cutter to cut the dough into stick shapes.
  7. Place the cut sticks on a parchment-lined baking sheet, leaving some space between them. Bake for about 25-30 minutes or until golden brown and firm to the touch.
