Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of ground cinnamon, and ½ teaspoon of baking soda. Set aside.
- In a separate bowl, beat ½ cup of unsalted butter and 1 cup of granulated sugar until light and fluffy, about 3-4 minutes.
- Mix in 1 large egg and 1 teaspoon of vanilla extract until well combined.
- Gradually add the dry mixture to the wet ingredients, mixing until just combined. Be careful not to overmix.
- Using a tablespoon or cookie scoop, drop balls of dough onto the prepared baking sheet, leaving about 2 inches between each cookie.
- Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
- Once cooled, spread a generous layer of dulce de leche on the flat side of one cookie and top it with another cookie to create a sandwich.
