- Caramelize the Onions (If Using): Thinly slice one large yellow onion. In a skillet over medium-low heat, melt a tablespoon of butter or olive oil. Add the onions and cook slowly, stirring occasionally, for 25-40 minutes until they are deeply golden brown and very tender. Season with a pinch of salt.
- Prepare the Cream Cheese Spread: In a small bowl, combine softened cream cheese with mayonnaise. Add garlic powder, onion powder, salt, and black pepper. Mix thoroughly until smooth and well combined.
- Assemble the Tortillas: Lay a large flour tortilla flat on a clean work surface. Spread a thin, even layer of your cream cheese mixture over the entire surface of the tortilla.
- Layer the Fillings: Place 2-3 slices of provolone cheese over the cream cheese layer. Evenly distribute about 4-6 slices of thinly sliced roast beef over the cheese. If using, sprinkle a generous portion of the cooled caramelized onions over the roast beef.
