  • 2 large eggs
  • 1 cup of mixed vegetables (carrots, peas, corn, bell peppers)
  • 3 tablespoons of soy sauce
  • 2 tablespoons of vegetable oil (or sesame oil)
  • 2 green onions, finely chopped
  • 2 cloves of garlic, minced
  • Salt and pepper to taste
  • Optional: 1 teaspoon of sesame seeds for garnish

Instructions

  1. Cook your rice according to package instructions. For the best fried rice, use day-old rice or spread freshly cooked rice on a baking sheet to cool and dry for about 30 minutes.
  2. Chop your mixed vegetables into small, uniform pieces.
  3. Crack the eggs into a bowl and whisk them until fully combined.
  4. Minced the garlic cloves finely.
  5. Slice the green onions, separating the white parts from the green tops.
  6. In a large skillet or wok, heat the vegetable oil over medium-high heat.
  7. Add the minced garlic and the white parts of the green onions to the hot oil and sauté for about 30 seconds.
  8. Toss in your chopped mixed vegetables and stir-fry for about 2-3 minutes.
  9. Push the vegetables to one side of the skillet to create space for the eggs.
  10. Pour the whisked eggs into the empty side of the skillet and scramble until fully cooked.
  11. Add the cooked rice, breaking up any clumps before mixing it with the vegetables and eggs.
  12. Pour the soy sauce over the rice and mix thoroughly, adjusting seasoning with salt and pepper as needed.
  13. Continue to stir-fry the rice mixture for another 3-5 minutes.
  14. Add the green onion tops and give it one last stir.
  15. Sprinkle sesame seeds on top for garnish and serve hot.
