Instructions

  1. In a medium mixing bowl, add the softened cream cheese. Ensure it’s at room temperature for easy mixing.
  2. Using a hand mixer or a whisk, beat the cream cheese until smooth and creamy.
  3. Add in the powdered sugar and vanilla extract. Continue to mix until well combined and fluffy (about 2-3 minutes).
  4. Gently fold in the sliced strawberries, keeping some pieces intact for texture.
  5. Lay out the slices of bread on a clean surface.
  6. Spread a generous amount of the cheesecake filling on one side of each slice, leaving space around the edges.
  7. Top half of the slices with another slice of bread, pressing down gently to create a sandwich.
  8. In a shallow dish, add the all-purpose flour for the first layer of coating.
  9. In another shallow dish, crack the two large eggs and whisk until well beaten.
  10. In a third shallow dish, combine the breadcrumbs and granulated sugar. Add cinnamon if desired.
  11. Dip each sandwich into the flour, coating both sides and shaking off excess.
  12. Next, dip the floured sandwich into the beaten eggs, ensuring full coverage.
  13. Finally, press the sandwich into the breadcrumb mixture, coating both sides thoroughly.
  14. In a large skillet, pour enough vegetable oil to cover the bottom by about 1/2 inch. Heat over medium until hot but not smoking.
